1. News: THERE'S NO SUCH THING AS A MEAT-EATING ENVIRONMENTALIST, SAYS FORMER BEATLE PAUL MCCARTNEY IN PETA INTERVIEW
New York -- "I think it's very surprising that most major environmental organizations are leaving the option of going vegetarian off their lists of top ways to curtail global warming," says Sir Paul McCartney in an exclusive interview with PETA, released just in time for Earth Day. "[Going vegetarian] is a simple but extremely effective step that many people could take to help the environment and improve their own health at the same time."
Although he believes that driving a fuel-efficient car and using energy-saving devices at home are also important, McCartney's emphasis on a vegetarian diet as the best way to fight global warming has the backing of the experts. In a recent U.N. report, scientists concluded that raising animals for food generates more greenhouse-gas emissions than all the cars, trucks, ships, and planes in the world combined. Researchers at the University of Chicago determined that switching to a vegan diet is more effective in countering global warming than switching from a standard American car to a Toyota Prius.
"I think the biggest change anyone could make in their own lifestyle would be to become vegetarian," continues the former Beatle, who "went veggie" (the term coined by his late wife, Linda) decades ago after watching lambs play in a field outside his home.
McCartney also expressed his concern for the near-total depletion of certain fish species by the commercial fishing industry. "Unfortunately, many people seem to think that vegetarians eat fish, but this is not so. ... [W]hen you consider the overfishing, the marine pollution, and the huge damage to our precious oceans that are caused by commercial fishing, it becomes obvious that a vegetarian lifestyle would greatly improve our environment and help to save our oceans."

3. The Cook's Corner: VEGETARIAN SAUSAGES
(Editor's Note: If you've developed a recipe of your own, or have an old family favorite that you'd like to share with our readers and with visitors to our website, email it to us at lani@smarterveg.com. Please do not send published recipes from a cookbook or from a website you found online as the copyrights to those recipes belong to other people.)

INGREDIENTS
DIRECTIONS:
Mix the breadcrumbs, nuts, onion, cheese, and seasonings together. Add eggs. Form into 16 sausage shapes and place in a baking pan lightly sprayed with oil. Leave a bit of space between the sausages: don't let them touch, or they may not cook through all the way. Bake at 350 degrees for approximately 20 minutes or until just firm. (Baking time may vary depending on your oven). Do not allow them to dry out!

Hi, I'm new to the vegetarian diet and still learning about which ingredients are OK to eat. Can you tell me if pregelatinized starch is derived from animals? Thanks. Leo
Hi Leo, When starch and water are heated, the starch molecues burst and form a gelatin like substance, which is why this ingredient is called pre-gelatinized starch. However, this ingredient does not actually contain gelatin and it's suitable for vegetarians and vegans. I hope this info helps - and best wishes on your diet. Lani

I've seen adipic acid listed as being not vegetarian on some lists, but I noticed that you call it vegan in your SmartList software. Why is that? Charlotte
Hi Charlotte, Historically, adipic acid was prepared from various fats and it was derived from animals, but today commercial adipic acid is produced from cyclohexane by two oxidation steps. When we research ingredients, we research how the ingredient is commercially manufactured today. I hope this clarifies things for you. Lani

Hi Jean, Earth Footwear and Van's are two companies that advertise vegan shoes. Make sure you check their models carefully though since not all of their shoes are suitable. You can find both companies online. Lani
